Hello. I wanted to make sure I understand the process of adding icons and confirm its the same in v2 of GB Pro. I read some documentation pre-v2 and watched this video: https://www.youtube.com/watch?v=PVX0YpBat5c&t=196s
I’ve never subscribed to an incon website and I’m not really sure what happens after I purchase icons since alot of the websites are grouping the icons in “sets.” For example a construction set of icons will have 30 icons on one sheet. So I’m assuming when I sign up with a icon provider they’ll provide the html code for each icon in that set, and then I procede with the process as laid out in the video? Is there a bulk way of doing it rather than one by one? Also, if I use the input HTML option in the page, do I still run it through https://jakearchibald.github.io/svgomg/ ?

Yes, the process doesn’t change.
If you want to bulk upload the icons, the file needs to be a JSON file.
I’m not sure if the icon you are going to purchase will send you a JSON file.
And it’s better run through svgomg tool to ensure the icon is clean, but I think the paid icons should be fine too, you can give a try first by adding the icon to a button.
