Query Loop by Post Category

Hello-
I’m curious if it’s possible to create query loops by category vs. post type? We have a variety of post categories but we only want 3 of them to cycle through on the home page. https://www.blueridgebirdwatcher.com/

Species profiles, famility matters, and destination guides. I’m trying to avoid the need to create custom post types because I haven’t done that before.

If not, is there another block type that would accomplish this exact layout but the query would be pulling the latest post of a specific category.
